For the Burritos:
- 4 large flour tortillas
- 1 cup cooked rice (white or brown)
- ½ cup black beans, drained and rinsed
- ½ cup shredded cheddar or Mexican blend cheese
- ¼ cup diced tomatoes
- ¼ cup chopped lettuce
- ¼ cup diced red onion
- ¼ cup sour cream (optional)
- ¼ cup guacamole (optional)
Instructions
- Prepare the Chicken:
- Preheat a grill or grill pan over medium heat.
- Rub the chicken with olive oil and season with garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper.
- Grill for 5-7 minutes per side until the internal temperature reaches 165°F (75°C).
- Remove from heat and let rest before slicing into strips.
- Make the Chipotle Ranch Sauce:
- Mix ranch dressing, minced chipotle pepper, lime juice, and garlic powder in a small bowl.
- Stir until smooth and set aside.
- Assemble the Burritos:
- Lay a tortilla on a clean surface.
