Ingredients
- 2 cups cooked shredded chicken (rotisserie works well)
- 2 cups cooked rice
- 1 can (15 oz) black beans, drained and rinsed

- 1 cup corn kernels (fresh, frozen, or canned)
- 1 can (10 oz) enchilada sauce
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 2 cups shredded Mexican blend cheese
- 8 small flour tortillas, torn into bite-sized pieces
- 1/4 cup chopped fresh cilantro (optional for garnish)
- Sour cream, salsa, or guacamole for serving (optional)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Step 2: Prepare the Mixture
In a large mixing bowl, combine the shredded chicken, cooked rice, black beans, diced tomatoes with green chilies, corn, enchilada sauce, chili powder, cumin, garlic powder, onion powder, and salt. Stir well to incorporate all ingredients.
Step 3: Assemble the Casserole
Spread half of the torn tortillas evenly in the greased baking dish. Spoon half of the chicken mixture over the tortillas and sprinkle with 1 cup of cheese. Repeat with another layer of tortillas, remaining chicken mixture, and the rest of the cheese.
Step 4: Bake
Cover the casserole with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Let the casserole rest for 5 minutes before serving. Garnish with fresh cilantro and serve with sour cream, salsa, or guacamole if desired.
