Instructions

Step 1: Make the Blueberry Compote

  1. In a small saucepan, combine blueberries, sugar, and lemon juice.
  2. Cook over medium heat for 3-4 minutes until the berries release their juices.
  3. Stir in the cornstarch mixture and simmer for 1-2 minutes until thickened.
  4. Remove from heat and let cool completely.

Step 2: Prepare the Cheesecake Swirl

  1. In a small bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  2. Set aside.

Step 3: Make the Cookie Dough

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
