For the Pork Chops:
- 4 bone-in or boneless pork chops (1-inch thick)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 2 tablespoons all-purpose flour (for dredging)
- 2 tablespoons vegetable oil or butter
For the Gravy:
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups chicken or beef broth
- 1/2 cup heavy cream or whole milk
- 1 teaspoon Worcestershire sauce
- Salt and black pepper, to taste
Instructions
- Prepare the Pork Chops
Pat pork chops dry. Mix salt, black pepper, garlic powder, onion powder, paprika, and thyme in a small bowl. Season both sides of the pork chops and lightly coat with flour. - Sear the Pork Chops
Heat vegetable oil or butter in a large skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown. Remove and set aside. - Cook the Onions and Garlic
Reduce heat to medium. Melt butter in the same skillet and cook onions for 5-7 minutes until softened and caramelized. Add garlic and cook for 30 seconds. - Make the Gravy
Sprinkle flour over onions, stirring well. Cook for 1-2 minutes. Gradually whisk in broth, stirring constantly. Add Worcestershire sauce and simmer for 2-3 minutes. Stir in heavy cream and season to taste. - Simmer the Pork Chops
Return pork chops to the skillet, nestling them into the gravy. Reduce heat to low, cover, and simmer for 15-20 minutes, until fully cooked (internal temperature of 145°F). - Serve and Enjoy
Serve over mashed potatoes, rice, or buttered noodles. Spoon extra gravy over the top.
