  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

Smothered pork chops are a classic comfort food featuring tender, juicy pork chops in a rich, savory gravy. This easy Southern-inspired dish is perfect for a cozy dinner at home.

Ingredients

Scale

For the Pork Chops:

  • 4 bone-in or boneless pork chops (1-inch thick)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 2 tablespoons all-purpose flour (for dredging)
  • 2 tablespoons vegetable oil or butter

For the Gravy:

  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken or beef broth
  • 1/2 cup heavy cream or whole milk
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Pork Chops
Pat pork chops dry. Mix salt, black pepper, garlic powder, onion powder, paprika, and thyme in a small bowl. Season both sides of the pork chops and lightly coat with flour.
  2. Sear the Pork Chops
Heat vegetable oil or butter in a large skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown. Remove and set aside.
  3. Cook the Onions and Garlic
Reduce heat to medium. Melt butter in the same skillet and cook onions for 5-7 minutes until softened and caramelized. Add garlic and cook for 30 seconds.
  4. Make the Gravy
Sprinkle flour over onions, stirring well. Cook for 1-2 minutes. Gradually whisk in broth, stirring constantly. Add Worcestershire sauce and simmer for 2-3 minutes. Stir in heavy cream and season to taste.
  5. Simmer the Pork Chops
Return pork chops to the skillet, nestling them into the gravy. Reduce heat to low, cover, and simmer for 15-20 minutes, until fully cooked (internal temperature of 145°F).
  6. Serve and Enjoy
Serve over mashed potatoes, rice, or buttered noodles. Spoon extra gravy over the top.
