- 2 cups chicken broth

- 2 tablespoons olive oil
- 1/2 cup frozen peas (optional, for added veggies)
- Fresh parsley or green onions, chopped (for garnish)
Instructions
- Sauté the sausage: Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook for 3-4 minutes until browned. Remove and set aside.
- Cook the aromatics: In the same pan, add diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add garlic and cook for another 30 seconds.
- Add the rice and seasonings: Stir in the rice, paprika, salt, black pepper, thyme, and red pepper flakes (if using). Cook for 1-2 minutes, allowing the rice to absorb flavors.
- Simmer the mixture: Pour in the diced tomatoes (with juices) and chicken broth. Stir well, then bring the mixture to a simmer.
- Cook the rice: Reduce heat to low, cover, and let it cook for 15-18 minutes or until the rice is tender and liquid is absorbed.
- Reintroduce the sausage: Stir in the cooked sausage and frozen peas (if using). Cover and let it sit for another 5 minutes to heat through.
- Garnish and serve: Sprinkle with fresh parsley or green onions before serving. Enjoy warm!
