  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup (1 stick) unsalted butter, cold and cut into cubes

  • Filling:
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine flour, powdered sugar, and salt for the crust.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Press the mixture evenly into the bottom of an ungreased 9×13 inch baking pan.
