- 4 cups potatoes, diced into ½-inch cubes (Yukon Gold or Russet)
- 1 medium onion, finely chopped
- 2 celery stalks, diced
- 3 cups beef broth (low-sodium recommended)
- 2 cups whole milk (or half-and-half)
- 1 cup shredded sharp cheddar cheese
- 2 tbsp butter
- 1 tsp garlic powder (or 2 cloves fresh minced garlic)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper (freshly ground)
- Fresh parsley for garnish
Instructions
- Melt butter in a large Dutch oven over medium heat. Add chopped onions and cook for 2 minutes until softened.
- Add diced celery and potatoes to the pot, stirring occasionally, and cook for an additional 5 minutes until vegetables are slightly tender.
- In a separate skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Cook until no pink remains and a brown crust develops. Drain excess fat.
- Add the cooked ground beef to the pot with vegetables. Pour in beef broth, scraping up any browned bits from the bottom.
- Bring the mixture to a boil, then reduce heat to a simmer. Cover partially and cook for 15-20 minutes until potatoes are fork-tender.
- Stir in milk (or half-and-half), shredded cheddar cheese, garlic powder, salt, and black pepper. Cook for an additional 5 minutes, stirring until cheese is melted and soup is heated through.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For a thicker soup, mash some of the potatoes against the side of the pot before adding the milk and cheese.
- Substitute ground turkey or chicken for a lighter version of the soup.
- Add other vegetables like carrots or peas for additional flavor and nutrition.
