Description

  • 2 celery stalks, diced
  • 3 cups beef broth (low-sodium recommended)
  • 2 cups whole milk (or half-and-half)
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp butter
  • 1 tsp garlic powder (or 2 cloves fresh minced garlic)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper (freshly ground)
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large Dutch oven over medium heat. Add chopped onions and cook for 2 minutes until softened.
  2. Add diced celery and potatoes to the pot, stirring occasionally, and cook for an additional 5 minutes until vegetables are slightly tender.
  3. In a separate skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Cook until no pink remains and a brown crust develops. Drain excess fat.
  4. Add the cooked ground beef to the pot with vegetables. Pour in beef broth, scraping up any browned bits from the bottom.
  5. Bring the mixture to a boil, then reduce heat to a simmer. Cover partially and cook for 15-20 minutes until potatoes are fork-tender.
  6. Stir in milk (or half-and-half), shredded cheddar cheese, garlic powder, salt, and black pepper. Cook for an additional 5 minutes, stirring until cheese is melted and soup is heated through.
  7. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the pot before adding the milk and cheese.
