  • Yield: 6-8 servings 1x

Description

Slow-cooked Garlic Beef Pasta combines tender beef, aromatic garlic, herbs, and creamy Parmesan sauce with al dente pasta for a hearty, flavorful comfort meal. Perfect for busy schedules or gatherings!

Ingredients

Scale

For the Slow-Cooked Beef:

  • 2 pounds beef chuck roast or stew meat, cut into bite-sized pieces
  • 4 garlic cloves, minced
  • 1 medium onion, diced
  • 1 cup beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

For the Pasta:

  • 12 ounces pasta (penne, rigatoni, or preferred shape)
  • ½ cup heavy cream
  • 1 cup shredded Parmesan cheese (plus more for garnish)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  • Prepare the Beef
    • Heat olive oil in a skillet over medium-high heat. Brown beef pieces on all sides (optional but recommended for enhanced flavor).
    • Transfer browned beef to the slow cooker.
  • Add Aromatics and Base Ingredients
    • Sauté garlic and onion in the same skillet until fragrant (2-3 minutes).
    • Add to the slow cooker along with beef broth, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Stir to combine.
  • Slow Cook the Beef
    • Cook on low for 7-8 hours or high for 4-5 hours, until beef is tender and easily shredded.
  • Cook the Pasta
    • About 20 minutes before the beef is done, cook pasta in salted water according to package instructions. Drain and set aside.
  • Combine and Finish
    • Stir heavy cream and Parmesan cheese into the slow cooker. Mix until the sauce is creamy and combined.
    • Add cooked pasta, gently toss to coat, and let sit for 5-10 minutes to absorb the flavors.
  • Serve
    • Garnish with parsley and extra Parmesan if desired. Serve hot.

Notes

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat gently in a skillet with a splash of broth or water to maintain sauce texture.
  • Freezing: Freeze beef and sauce (without pasta) for up to 3 months. Thaw overnight and add fresh pasta.
  • For extra vegetables, add spinach, zucchini, or bell peppers during the final hour of slow cooking.
