Instructions

  1. Prepare the Squash
    • Preheat oven to 400°F (200°C).
    • Slice delicata squash in half lengthwise, remove seeds, and cut into thin half-moon slices.
    • Toss squash slices with olive oil, salt, black pepper, and optional cinnamon and red pepper flakes.
    • Roast on a baking sheet in a single layer for 20–25 minutes, flipping halfway, until tender and caramelized.
  2. Prepare the Flatbread
    • If using pizza dough, roll it out into a thin rectangle or circle and place on a parchment-lined baking sheet.
    • Brush surface with olive oil.
  3. Assemble the Flatbread
    • Spread ricotta or goat cheese evenly over the flatbread.
    • Sprinkle with Parmesan cheese.
    • Arrange roasted squash slices and red onion on top.
    • Sprinkle with fresh thyme or rosemary.
  4. Bake the Flatbread
    • Bake at 400°F (200°C) for 12–15 minutes, until edges are crispy and golden brown.
  5. Garnish and Serve
    • Top with fresh arugula if using.
    • Drizzle with honey or balsamic glaze.
