  • 2 cups baby potatoes, halved
  • 1 ear corn, cut into 4 pieces
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional, for extra heat)
  • Juice of 1 lemon
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  • Preheat the Oven – Set oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  • Prepare the Vegetables – Toss baby potatoes, corn, and bell peppers with olive oil, half of the Cajun seasoning, salt, and black pepper in a large bowl.
  • Bake the Vegetables – Spread seasoned vegetables onto the prepared baking sheet and bake for 15 minutes.
  • Season the Shrimp – In the same bowl, mix shrimp with melted butter, remaining Cajun seasoning, smoked paprika, garlic, and cayenne pepper if using.
  • Combine and Bake Again – Remove partially cooked vegetables, add shrimp on top, and bake for an additional 10 minutes or until shrimp turn pink and opaque.
  • Finish with Freshness – Drizzle with lemon juice and garnish with chopped parsley.
