- 1 pound large shrimp, peeled and deveined
- 2 cups baby potatoes, halved
- 1 ear corn, cut into 4 pieces
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional, for extra heat)
- Juice of 1 lemon
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat the Oven – Set oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- Prepare the Vegetables – Toss baby potatoes, corn, and bell peppers with olive oil, half of the Cajun seasoning, salt, and black pepper in a large bowl.
- Bake the Vegetables – Spread seasoned vegetables onto the prepared baking sheet and bake for 15 minutes.
- Season the Shrimp – In the same bowl, mix shrimp with melted butter, remaining Cajun seasoning, smoked paprika, garlic, and cayenne pepper if using.
- Combine and Bake Again – Remove partially cooked vegetables, add shrimp on top, and bake for an additional 10 minutes or until shrimp turn pink and opaque.
- Finish with Freshness – Drizzle with lemon juice and garnish with chopped parsley.
- Serve and Enjoy – Plate the dish and enjoy it while hot!
