- 4 large russet potatoes, peeled and cubed

- 1/4 cup heavy cream
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 cup cooked and crumbled bacon (optional for topping)
- Fresh parsley, chopped (optional for garnish)

Prepare the Steak and Potatoes:
- Heat olive oil in a large skillet over medium-high heat. Brown steak cubes for 3-4 minutes until seared on all sides. Remove steak and set aside.
- In the same skillet, sauté diced onion for 2-3 minutes until soft. Add minced garlic and cook for an additional 30 seconds.

Layer in the Crockpot:
- Place cubed potatoes in the bottom of the crockpot.
- Add browned steak, sautéed onions, and garlic on top of the potatoes.

Prepare the Creamy Sauce:
- In a separate bowl, combine sour cream, heavy cream, salt, pepper, smoked paprika, and thyme. Pour this mixture over the steak and potatoes in the crockpot.

Slow Cook:
- Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and steak is cooked through.

Add Cheese and Bacon:
- About 15 minutes before serving, sprinkle shredded cheddar cheese over the top of the dish and let it melt.
