Description

This Crockpot Loaded Steak and Potato Bake is a comforting, hearty meal with tender steak, creamy potatoes, melted cheddar cheese, and crispy bacon. Perfect for busy days, this one-pot dish is easy to prepare and full of flavor.

  • 1 lb steak (sirloin or ribeye recommended), cut into cubes
  • 4 large russet potatoes, peeled and cubed
  • 1 medium onion, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 cup cooked and crumbled bacon (optional for topping)
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Prepare the Steak and Potatoes:

    • Heat olive oil in a large skillet over medium-high heat. Brown steak cubes for 3-4 minutes until seared on all sides. Remove steak and set aside.
    • In the same skillet, sauté diced onion for 2-3 minutes until soft. Add minced garlic and cook for an additional 30 seconds.
  2. Layer in the Crockpot:

    • Place cubed potatoes in the bottom of the crockpot.
    • Add browned steak, sautéed onions, and garlic on top of the potatoes.
  3. Prepare the Creamy Sauce:

    • In a separate bowl, combine sour cream, heavy cream, salt, pepper, smoked paprika, and thyme. Pour this mixture over the steak and potatoes in the crockpot.
  4. Slow Cook:

    • Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and steak is cooked through.
  5. Add Cheese and Bacon:

    • About 15 minutes before serving, sprinkle shredded cheddar cheese over the top of the dish and let it melt.
  6. Serve:

    • Once the cheese is melted, top with crumbled bacon and fresh parsley if desired. Serve hot and enjoy!
