Description

Crockpot Fiesta Chicken is a flavorful Tex-Mex dish made with chicken, black beans, corn, salsa, and seasoning. This easy, slow-cooked recipe is perfect for busy weeknights and can be served over rice, in tacos, or as a dip.

  • 4 boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch seasoning mix
  • 1 jar (16 oz) salsa (mild, medium, or hot, depending on preference)
  • 1/2 cup chicken broth
  • 1 cup shredded cheese (cheddar or Mexican blend)

 

  • Optional toppings: sour cream, cilantro, avocado, tortilla chips, or lime wedges

Instructions

  • Prepare the Crockpot: Spray the inside of the Crockpot with cooking spray or use a liner for easy cleanup.
  • Add Chicken: Place the chicken breasts in the bottom of the slow cooker.
  • Add Seasonings: Sprinkle the taco seasoning and ranch seasoning mix evenly over the chicken.
  • Add Salsa, Beans, and Corn: Pour the salsa, black beans, and corn over the seasoned chicken.
  • Add Chicken Broth: Pour the chicken broth into the Crockpot to keep the chicken moist while cooking.
  • Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and can be shredded easily.
  • Shred the Chicken: Use two forks to shred the chicken directly in the Crockpot, mixing it with the other ingredients.
  • Add Cheese: Sprinkle shredded cheese on top of the shredded chicken and cover for a few minutes until the cheese melts.

 

  • Serve: Serve the Fiesta Chicken over rice, in tortillas, or as a hearty dip. Top with optional garnishes like sour cream, cilantro, or avocado.
