- 1 jar (16 oz) salsa (mild, medium, or hot, depending on preference)
- 1/2 cup chicken broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- Optional toppings: sour cream, cilantro, avocado, tortilla chips, or lime wedges
Instructions
- Prepare the Crockpot: Spray the inside of the Crockpot with cooking spray or use a liner for easy cleanup.
- Add Chicken: Place the chicken breasts in the bottom of the slow cooker.
- Add Seasonings: Sprinkle the taco seasoning and ranch seasoning mix evenly over the chicken.
- Add Salsa, Beans, and Corn: Pour the salsa, black beans, and corn over the seasoned chicken.
- Add Chicken Broth: Pour the chicken broth into the Crockpot to keep the chicken moist while cooking.
- Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and can be shredded easily.
- Shred the Chicken: Use two forks to shred the chicken directly in the Crockpot, mixing it with the other ingredients.
- Add Cheese: Sprinkle shredded cheese on top of the shredded chicken and cover for a few minutes until the cheese melts.
