- 2 lbs beef stew meat or sirloin tips, cut into bite-sized pieces
- 1 small onion, diced
- 3 cups beef broth
- 1 packet (1 oz) onion soup mix
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 1 teaspoon dried thyme (optional)
- 1 can (10.5 oz) cream of mushroom soup
- 2 tablespoons cornstarch mixed with 2 tablespoons cold water (for thickening)
- 12 oz egg noodles
- 2 tablespoons butter (for noodles)
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Ingredients
- Cut the beef into bite-sized pieces if not pre-cut.
- Dice the onion and set aside.
- Assemble in the Crockpot
- Add beef, onion, beef broth, onion soup mix, Worcestershire sauce, garlic powder, black pepper, and thyme (if using) to the slow cooker.
- Stir to combine.
- Slow Cook the Beef
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender.
- Add the Mushroom Soup
- Stir in the cream of mushroom soup about 30 minutes before serving.
- Thicken the Gravy
- Mix cornstarch with cold water and stir into the slow cooker.
- Let cook for another 10-15 minutes until thickened.
- Cook the Noodles
- Cook egg noodles according to package directions.
- Drain and toss with butter.
- Serve and Enjoy
- Spoon beef tips and gravy over buttered noodles.
- Garnish with fresh parsley if desired.
