Ingredients

Scale
  • 1 lb ground beef
  • 4 cups potatoes, peeled and diced
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 cup milk or heavy cream (optional, for creamier texture)
  • 2 tablespoons flour (optional, for thickening)
  • 1 cup shredded cheddar cheese (optional, for garnish)
  • Fresh parsley (for garnish)

Instructions

  1. Brown the Beef – In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and transfer to the crock pot.
  2. Prepare the Vegetables – Peel and dice the potatoes, slice the carrots, chop the celery, and mince the garlic. Add all the vegetables to the crock pot.
  3. Add Liquids and Seasonings – Pour in the beef broth, Worcestershire sauce, and diced tomatoes. Stir in the Italian seasoning, paprika, salt, and black pepper.
  4. Slow Cook – Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes and vegetables are tender.
  5. Add Creamy Touch (Optional) – For a creamier soup, whisk together the milk and flour, then stir into the soup during the last 30 minutes of cooking.
  6. Serve and Enjoy – Ladle into bowls and garnish with shredded cheese and fresh parsley. Serve hot with crusty bread or crackers.

Notes

  • Cheesy Twist – Stir in 1 cup of shredded cheddar cheese for extra creaminess.
  • Spicy Kick – Add diced jalapeños or a pinch of red pepper flakes.
  • Healthier Option – Use ground turkey instead of beef and swap heavy cream for low-fat milk.
  • Vegetable Boost – Toss in peas, corn, or green beans for more nutrients.
  • Thicker Soup – Mash some of the potatoes or add a cornstarch slurry.
