- 2 medium zucchini, sliced into 1/4-inch rounds
- 1 cup breadcrumbs (panko or Italian-style for extra crunch)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 2 tablespoons milk
- Cooking spray or olive oil
Instructions
- Preheat the Oven or Air Fryer
- Oven: Preheat to 425°F (220°C) and line a baking sheet with parchment paper or a lightly greased wire rack.
- Air Fryer: Preheat to 400°F (200°C).
- Prepare the Breading Station
- In a shallow bowl, whisk together the egg and milk.
- In another bowl, combine breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- Coat the Zucchini
- Dip each zucchini round into the egg mixture, then press into the breadcrumb mixture, ensuring even coating.
- Place the coated slices on the prepared baking sheet or air fryer basket.
- Bake or Air Fry
- Oven: Lightly spray the zucchini with cooking spray and bake for 20–25 minutes, flipping halfway through, until golden and crispy.
- Air Fryer: Cook in a single layer for 10–12 minutes, shaking the basket halfway through.
- Serve & Enjoy
- Serve warm with your favorite dipping sauce.
