- 1 lb salmon fillet, skin removed, cut into bite-sized cubes
- 1/2 cup buttermilk
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 1 tablespoon honey
- 1 teaspoon lime juice
Instructions
- Marinate the Salmon:
- In a bowl, combine buttermilk, garlic powder, smoked paprika, salt, and black pepper.
- Add the salmon cubes, ensuring they are well-coated. Let marinate for at least 15 minutes (or up to 1 hour for deeper flavor).
- Coat the Salmon:
- In a shallow dish, mix cornstarch and panko breadcrumbs.
- Remove salmon from marinade and shake off excess liquid.
- Coat each piece in the cornstarch-panko mixture, pressing gently to adhere.
- Fry the Salmon:
- Heat about 1/2 inch of vegetable oil in a pan over medium-high heat.
- Once the oil reaches 350°F (175°C), carefully add coated salmon bites in batches.
- Fry for 2-3 minutes per side until golden brown and crispy.
- Remove and drain on a paper towel-lined plate.
- Prepare the Bang Bang Sauce:
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
- Serve and Enjoy:
- Drizzle or toss crispy salmon bites with Bang Bang sauce.
- Serve over waffles, in a breakfast wrap, or with eggs and toast.
Notes
- Healthier Version: Bake or air-fry at 400°F (200°C) for 10-12 minutes instead of frying.
- Gluten-Free Option: Use gluten-free panko or crushed rice crackers.
- Extra Heat: Add more sriracha or a sprinkle of cayenne.
