Ingredients

Scale
For the Chicken:
  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • ½ cup cornstarch
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 large egg
  • ¼ cup buttermilk
  • Vegetable oil, for frying
For the Bang Bang Sauce:
  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
Garnishes (Optional):
  • Chopped green onions
  • Sesame seeds
  • Fresh cilantro

Instructions

Step 1: Prepare the Chicken Coating

  1. In a medium bowl, whisk together cornstarch, flour, garlic powder, salt, black pepper, and paprika.
  2. In a separate bowl, beat the egg and mix in the buttermilk.

Step 2: Coat the Chicken

  1. Dip each piece of chicken into the egg mixture, then dredge it in the flour mixture to coat evenly.
  2. Place the coated chicken on a plate and let it rest for 5 minutes to help the coating adhere.

Step 3: Fry the Chicken

  1. Heat about 2 inches of vegetable oil in a deep skillet or heavy-bottomed pot to 350°F (175°C).
  2. Fry the chicken in batches for 4–5 minutes until golden brown and crispy.
  3. Remove with a slotted spoon and place on a wire rack or paper towel-lined plate to drain excess oil.

Step 4: Make the Bang Bang Sauce

  1. In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, and rice vinegar until smooth.

Step 5: Coat the Chicken

  1. Toss the crispy fried chicken in the Bang Bang sauce until evenly coated.
  2. Garnish with green onions, sesame seeds, or cilantro if desired.

Step 6: Serve

  • Serve immediately as an appetizer or over rice for a complete meal.

Notes

  • Baked Version: Bake at 400°F (200°C) for 20–25 minutes, flipping halfway.
  • Air Fryer Method: Air fry at 375°F (190°C) for 15 minutes, shaking the basket halfway.
  • Extra Spicy: Add more Sriracha or a pinch of cayenne pepper.
  • Healthier Option: Use Greek yogurt instead of mayonnaise for the sauce.
  • Vegetarian Alternative: Substitute chicken with cauliflower florets or tofu.
