Ingredients

Scale

For the Chicken:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional for extra heat)
  • 1 large egg
  • 2 cups vegetable oil (for frying)

For the Bang Bang Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha (adjust for heat preference)
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, mix chicken pieces with buttermilk and let marinate for at least 30 minutes (or up to 2 hours for extra tenderness).

Step 2: Prepare the Coating 2. In a separate bowl, whisk together flour, cornstarch, salt, black pepper, garlic powder, smoked paprika, and cayenne pepper. 3. In another bowl, beat the egg and set aside.

Step 3: Coat the Chicken 4. Remove chicken from buttermilk, allowing excess to drip off. 5. Dip each piece into beaten egg, then dredge in seasoned flour mixture, ensuring full coverage. 6. Repeat the coating process for an extra-crispy layer.

Step 4: Fry the Chicken 7. Heat vegetable oil in a deep pan to 350°F (175°C). 8. Fry chicken in batches for 3-4 minutes until golden brown and cooked through. 9. Remove and drain on a paper towel-lined plate.

Step 5: Make the Bang Bang Sauce 10. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth.

Step 6: Toss and Serve 11. Drizzle or toss crispy chicken in the Bang Bang sauce. 12. Serve immediately with garnishes like chopped green onions or sesame seeds.
