Instructions

  • Preheat & Prepare: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • Slice the Zucchini: Cut zucchini into 1/8-inch thick rounds using a sharp knife or mandoline slicer.
  • Prepare the Coating: In one bowl, whisk the egg and milk (if using). In another bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.
  • Coat the Zucchini: Dip each zucchini slice in the egg wash, let excess drip off, then coat with the breadcrumb mixture, pressing gently to adhere.
  • Arrange & Bake: Place coated zucchini slices in a single layer on the prepared baking sheet. Lightly spray or drizzle with olive oil.
