Instructions

  1. Prepare the Chicken:
    • Pat the chicken dry and season with salt, pepper, garlic powder, onion powder, and paprika.
    • Heat olive oil in a large skillet over medium-high heat.
    • Sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  2. Make the Creamy Gravy:
    • In the same skillet, melt butter over medium heat.
    • Add onions and cook until soft (about 3 minutes), then add garlic and thyme, cooking for another 30 seconds.
    • Stir in the flour and cook for 1 minute.
    • Slowly whisk in the chicken broth, ensuring no lumps form.
    • Stir in heavy cream, Worcestershire sauce, salt, and pepper. Simmer for 2–3 minutes.
  3. Cook the Rice:
    • In a separate pot, bring chicken broth (or water) to a boil.
    • Stir in the rice, salt, and butter. Reduce heat to low and cover.
    • Cook for 15–18 minutes until tender. Let sit for 5 minutes before fluffing with a fork.
  4. Smother the Chicken:
    • Return the chicken to the skillet with the gravy.
    • Cover and simmer on low for 10–12 minutes until the chicken reaches an internal temperature of 165°F (75°C).
    • If adding mushrooms or peas, stir them in during the last 5 minutes.
    • Taste and adjust seasoning if needed.
  5. Serve and Enjoy:
    • Spoon rice onto plates and top with chicken and gravy.
    • Garnish with fresh parsley or shredded cheese, if desired.
