Instructions
- Prepare the Chicken:
- Pat the chicken dry and season with salt, pepper, garlic powder, onion powder, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
- Make the Creamy Gravy:
- In the same skillet, melt butter over medium heat.
- Add onions and cook until soft (about 3 minutes), then add garlic and thyme, cooking for another 30 seconds.
- Stir in the flour and cook for 1 minute.
- Slowly whisk in the chicken broth, ensuring no lumps form.
- Stir in heavy cream, Worcestershire sauce, salt, and pepper. Simmer for 2–3 minutes.
- Cook the Rice:
- In a separate pot, bring chicken broth (or water) to a boil.
- Stir in the rice, salt, and butter. Reduce heat to low and cover.
- Cook for 15–18 minutes until tender. Let sit for 5 minutes before fluffing with a fork.
- Smother the Chicken:
- Return the chicken to the skillet with the gravy.
- Cover and simmer on low for 10–12 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- If adding mushrooms or peas, stir them in during the last 5 minutes.
- Taste and adjust seasoning if needed.
- Serve and Enjoy:
- Spoon rice onto plates and top with chicken and gravy.
- Garnish with fresh parsley or shredded cheese, if desired.
