  • 2 tbsp olive oil

  • ½ cup sun-dried tomatoes, chopped
  • ½ cup chicken or vegetable broth
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • ½ tsp red pepper flakes
  • Salt and black pepper, to taste
  • 2 tbsp fresh basil, chopped (plus extra for garnish)
  • 12 oz pasta (fettuccine, linguine, or spaghetti)
  • Reserved pasta water (½ cup)

Instructions

  1. Cook the Pasta:
    • Boil salted water and cook pasta until al dente. Reserve ½ cup of pasta water before draining. Set aside.
  2. Prepare the Shrimp:
    • Heat 1 tbsp olive oil in a skillet over medium heat. Season shrimp with salt and pepper. Cook 2–3 minutes per side until pink and opaque. Remove and set aside.
  3. Sauté Aromatics:
    • In the same skillet, heat another tbsp of olive oil. Sauté garlic until fragrant (1 minute). Add sun-dried tomatoes and cook for another minute.
  4. Make the Sauce:
    • Pour in broth and simmer. Stir in heavy cream and Parmesan, whisking until smooth and creamy.
  5. Add Spice and Herbs:
    • Sprinkle red pepper flakes. Adjust salt and pepper to taste. Stir in fresh basil.
  6. Combine Ingredients:
    • Return shrimp to the skillet. Add cooked pasta, tossing to coat in the sauce. If needed, thin the sauce with reserved pasta water.
  7. Serve:
    • Garnish with extra Parmesan and basil. Serve immediately.
