- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 garlic cloves, minced
- ½ cup sun-dried tomatoes, chopped
- ½ cup chicken or vegetable broth
- 1 cup heavy cream
- ¾ cup grated Parmesan cheese
- ½ tsp red pepper flakes
- Salt and black pepper, to taste
- 2 tbsp fresh basil, chopped (plus extra for garnish)
- 12 oz pasta (fettuccine, linguine, or spaghetti)
- Reserved pasta water (½ cup)
Instructions
- Cook the Pasta:
- Boil salted water and cook pasta until al dente. Reserve ½ cup of pasta water before draining. Set aside.
- Prepare the Shrimp:
- Heat 1 tbsp olive oil in a skillet over medium heat. Season shrimp with salt and pepper. Cook 2–3 minutes per side until pink and opaque. Remove and set aside.
- Sauté Aromatics:
- In the same skillet, heat another tbsp of olive oil. Sauté garlic until fragrant (1 minute). Add sun-dried tomatoes and cook for another minute.
- Make the Sauce:
- Pour in broth and simmer. Stir in heavy cream and Parmesan, whisking until smooth and creamy.
- Add Spice and Herbs:
- Sprinkle red pepper flakes. Adjust salt and pepper to taste. Stir in fresh basil.
- Combine Ingredients:
- Return shrimp to the skillet. Add cooked pasta, tossing to coat in the sauce. If needed, thin the sauce with reserved pasta water.
- Serve:
- Garnish with extra Parmesan and basil. Serve immediately.
