  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp olive oil
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup cherry tomatoes, halved (optional)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package instructions until al dente.
  3. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2: Cook the Shrimp

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add shrimp, season with salt and pepper, and cook for 1-2 minutes per side until pink and opaque.
  3. Remove shrimp from the skillet and set aside.

Step 3: Make the Creamy Garlic Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add minced garlic and cook for about 30 seconds until fragrant.
  3. Pour in chicken or vegetable broth, stirring to deglaze the pan.
  4. Add heavy cream, Parmesan cheese, red pepper flakes, and Italian seasoning.
  5. Stir continuously until the sauce thickens slightly, about 3-4 minutes.

Step 4: Combine Everything

  1. Return shrimp to the skillet and toss to coat in the sauce.
  2. Add the cooked pasta and mix well, adding reserved pasta water as needed to reach desired consistency.
  3. Stir in cherry tomatoes, if using, and cook for another 1-2 minutes.

Step 5: Serve

  1. Remove from heat and garnish with fresh parsley.
  2. Serve hot with additional Parmesan cheese on top.
