Instructions
- Prepare the Chicken
- Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.
- Sear the Chicken
- Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
- Add the chicken breasts and sear for 4-5 minutes per side, until golden brown.
- Remove the chicken and set it aside on a plate.
- Make the Sauce
- In the same skillet, reduce heat to medium and add the remaining butter.
- Sauté the minced garlic for 30 seconds, until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the pan. Let it simmer for 2 minutes.
- Stir in the heavy cream, Dijon mustard, and honey (if using). Simmer for another 2-3 minutes.
- Combine and Finish
- Return the chicken to the pan, spooning some sauce over it.
- Reduce heat to low and let it cook for 5-7 minutes, until the chicken is cooked through (165°F internal temperature).
- Sprinkle with fresh thyme before serving.
