  • Yield: 8 servings 1x

Description

This Crack Breakfast Casserole is a hearty, cheesy breakfast dish featuring eggs, crispy bacon, hash browns, and cream cheese. Perfect for make-ahead breakfasts or brunch, it’s a crowd-pleaser packed with creamy, savory flavor.

Ingredients

Scale
  • 6 large eggs
  • 1 ½ cups milk
  • ½ cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika (optional)
  • Salt and black pepper, to taste
  • 3 cups frozen shredded hash browns, thawed
  • 1 ½ cups cooked bacon, crumbled (about 1012 strips)
  • 1 ½ cups shredded cheddar cheese
  • 4 ounces cream cheese, cubed
  • 2 green onions, thinly sliced (optional garnish)

Instructions

  • Preheat the Oven
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with nonstick spray or butter.
  • Prepare the Egg Mixture
In a large bowl, whisk together eggs, milk, heavy cream, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Assemble the Casserole
Spread thawed hash browns evenly in the baking dish. Sprinkle crumbled bacon on top, followed by shredded cheddar cheese and cream cheese cubes.
  • Pour the Egg Mixture
Slowly pour the egg mixture over the hash browns and cheese. Use a spatula to press ingredients down so they soak in the liquid.
  • Bake
Bake for 35-40 minutes, or until the center is set and the top is golden brown.
  • Garnish and Serve
Let the casserole cool for 5-10 minutes. Garnish with green onions, slice into squares, and serve warm.

Notes

  • Prep Ahead: Assemble the casserole the night before, refrigerate, and bake fresh in the morning.

  • Reheating: Microwave slices for 1-2 minutes or bake at 350°F for 10-15 minutes.
