Cowboy Breakfast Sliders

  • Total Time: 35 minutes
  • Yield: 6 servings 1x

Description

  • Cowboy Breakfast Sliders are hearty, flavor-packed mini sandwiches made with fluffy eggs, crispy bacon or sausage, melted cheese, and soft slider buns. Perfect for brunch, meal prep, or a grab-and-go breakfast.

Ingredients

Scale

For the sliders:

  • 12 slider buns (Hawaiian rolls or soft dinner rolls)
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • 6 slices bacon, cooked and crumbled (or 6 sausage patties)
  • 1 cup shredded cheddar cheese (or a blend of cheeses)
  • 2 tablespoons butter, melted

For the topping (optional):

  • 1 tablespoon everything bagel seasoning
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Prepare the Oven and Rolls
    • Preheat oven to 350°F (175°C). Slice the slider buns in half horizontally without separating them individually. Place the bottom half in a greased 9×13-inch baking dish.
  2. Cook the Eggs
    • In a medium bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and smoked paprika. Pour into a heated nonstick skillet over medium-low heat. Scramble gently until just set (they will continue cooking in the oven).
  3. Assemble the Sliders
    • Spread scrambled eggs evenly over the bottom half of the slider buns. Sprinkle the crumbled bacon or place the sausage patties on top. Add a generous layer of shredded cheese.
  4. Add the Top Buns and Butter Topping
    • Place the top half of the slider buns over the filling. Brush the tops with melted butter and sprinkle with everything bagel seasoning (if using).
  5. Bake the Sliders
    • Cover the dish loosely with foil and bake for 10 minutes. Remove the foil and bake for another 5-7 minutes, or until the tops are golden brown and the cheese is melted.
  6. Serve and Enjoy
    • Let the sliders cool slightly before slicing into individual portions. Garnish with fresh parsley if desired. Serve warm.

Notes

  • Meat options: Use ham, turkey sausage, or shredded brisket.
  • Cheese choices: Swap cheddar for pepper jack, Swiss, or mozzarella.
  • Make it spicy: Add diced jalapeños, hot sauce, or cayenne to the eggs.
  • Vegetarian version: Omit the meat and add sautéed mushrooms, bell peppers, and spinach.
