  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

Crispy, golden-brown country-fried pork chops smothered in rich, smoky bacon gravy—a comforting Southern classic. Perfect for family dinners, this hearty dish pairs wonderfully with mashed potatoes, biscuits, or collard greens.

Ingredients

Scale

For the Pork Chops:

  • 4 bone-in or boneless pork chops (¾ inch thick)
  • 1 cup all-purpose flour
  • ½ cup cornstarch (for extra crispiness)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (optional, for heat)
  • 2 large eggs
  • ¼ cup buttermilk (or regular milk)
  • ½ cup vegetable oil (for frying)

For the Bacon Gravy:

  • 4 slices bacon, chopped
  • 2 tablespoons bacon grease (reserved from cooking bacon)
  • 2 tablespoons butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk (adjust for desired consistency)
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Instructions

Step 1: Prepare the Pork Chops

  1. Pat pork chops dry with a paper towel for better coating adhesion.
  2. In a shallow dish, combine flour, cornstarch, salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper.
  3. In a separate shallow dish, whisk together eggs and buttermilk.

Step 2: Dredge and Fry

  1. Dredge each pork chop in the flour mixture, then dip into the egg mixture, and coat again in the flour mixture, pressing firmly.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Fry pork chops for 4-5 minutes per side until golden brown and crispy. Remove and drain on paper towels.

Step 3: Make the Bacon Gravy

  1. In the same skillet, cook chopped bacon over medium heat until crispy. Remove bacon and set aside, reserving 2 tablespoons of grease.
  2. Add butter to the skillet with bacon grease. Stir in flour and cook for 1-2 minutes until golden brown.
  3. Slowly whisk in milk, stirring constantly to prevent lumps. Simmer for 3-5 minutes until thickened.
  4. Season with salt, black pepper, and garlic powder. Stir in the cooked bacon.

Step 4: Serve

  • Pour bacon gravy over fried pork chops and serve immediately with mashed potatoes, biscuits, or your favorite sides.

Notes

  • Spicy Kick: Add more cayenne or hot sauce to the gravy.
  • Creamier Gravy: Use heavy cream instead of milk.
  • Herb Infusion: Add fresh thyme or rosemary to the gravy.
  • Baked Version: Bake pork chops at 400°F for 20-25 minutes instead of frying.
