- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup cooked beans (optional, for added protein)
- 1/2 pound beef or sausage (optional, for a meatier version)
Instructions
- Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add onion, garlic, and celery. Sauté for 3-4 minutes until onion is translucent.
- Brown the Meat (If Using): Add beef or sausage and cook until browned, breaking it into smaller pieces.
- Add the Vegetables: Stir in turnips, carrots, and potatoes. Cook for 5 minutes, stirring occasionally.
- Simmer the Stew: Pour in broth and diced tomatoes. Add thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil, then reduce heat. Cover and simmer for 30-40 minutes until vegetables are tender.
- Add Beans (If Using): Stir in beans during the last 10 minutes of cooking.
- Final Touches: Remove bay leaf and adjust seasoning as needed. Serve hot.
