Ingredients

Scale
  • 3 medium turnips, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 potato, peeled and cubed
  • 4 cups vegetable or beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup cooked beans (optional, for added protein)
  • 1/2 pound beef or sausage (optional, for a meatier version)

Instructions

  1. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add onion, garlic, and celery. Sauté for 3-4 minutes until onion is translucent.
  2. Brown the Meat (If Using): Add beef or sausage and cook until browned, breaking it into smaller pieces.
  3. Add the Vegetables: Stir in turnips, carrots, and potatoes. Cook for 5 minutes, stirring occasionally.
  4. Simmer the Stew: Pour in broth and diced tomatoes. Add thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil, then reduce heat. Cover and simmer for 30-40 minutes until vegetables are tender.
  5. Add Beans (If Using): Stir in beans during the last 10 minutes of cooking.
  6. Final Touches: Remove bay leaf and adjust seasoning as needed. Serve hot.

Notes

  • Vegetarian Version: Use vegetable broth and omit meat.
  • Spicy Kick: Add red pepper flakes or a diced chili.
  • Thicker Stew: Mash some potatoes and turnips for a creamier texture.
