Instructions

  1. Prepare the Ingredients

    • Finely chop tomatoes and onions for even cooking. Mince the garlic.
  2. Sauté the Aromatics

    • Heat oil in a saucepan over medium heat. Add onions and cook until translucent (3-4 minutes). Stir in garlic and cook for another minute.
  3. Cook the Tomatoes

    • Add chopped tomatoes, stir well, and reduce heat to medium-low. Let them simmer, stirring occasionally, until they release juices and break down.
  4. Season the Sauce

    • Stir in cumin, salt, black pepper, and optional paprika. Simmer for 10-15 minutes, allowing flavors to meld. Add a pinch of sugar if needed.
  5. Adjust Consistency

    • Add a tablespoon of water or broth if too thick; simmer longer if too thin.
  6. Finish the Sauce

    • Stir in green onions (if using) and remove from heat. Garnish with fresh cilantro.
