For the Chicken Marinade:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For the Chipotle Ranch Sauce:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 chipotle pepper in adobo sauce (or more for extra heat)
- 1 tablespoon adobo sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon fresh lime juice
- 1 teaspoon dried dill
- 1 teaspoon dried parsley
- 1/4 teaspoon salt
For the Burritos:
- 4 large flour tortillas
- 1 cup cooked Mexican rice or cilantro lime rice
- 1 cup shredded Monterey Jack or cheddar cheese
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels (fresh, canned, or frozen)
- 1/2 cup diced tomatoes or pico de gallo
- 1/4 cup chopped fresh cilantro
- 1/2 avocado, sliced (optional)
Instructions
Step 1: Marinate and Grill the Chicken
- In a bowl, whisk together olive oil, lime juice, and all seasonings.
- Coat chicken with the marinade and let rest for at least 30 minutes (or up to 2 hours).
- Heat a grill or grill pan over medium-high heat. Cook chicken for 5-7 minutes per side until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes, then dice or shred it.
Step 2: Make the Chipotle Ranch Sauce
- Blend mayonnaise, sour cream, chipotle pepper, adobo sauce, garlic powder, onion powder, lime juice, dill, parsley, and salt until smooth.
- Taste and adjust seasoning if needed.
Step 3: Assemble the Burritos
- Lay a tortilla on a flat surface.
- Spread 1-2 tablespoons of chipotle ranch sauce in the center.
- Layer rice, black beans, corn, diced tomatoes, and cheese.
- Add grilled chicken, fresh cilantro, and avocado slices (if using).
Step 4: Fold and Grill
- Fold the sides inward and roll tightly.
- Heat a skillet over medium heat and grease lightly.
- Place the burrito seam-side down and cook for 1-2 minutes per side until golden and crispy.
Step 5: Serve and Enjoy
- Slice in half and serve with extra chipotle ranch sauce.
