  • 2 eggs, lightly beaten

  • ½ cup peas
  • ½ cup diced onions
  • 2 cloves garlic, minced
  • ½ cup diced cooked chicken, shrimp, or tofu
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • ½ teaspoon white pepper
  • 2 green onions, chopped

Instructions

Step 1: Prepare the Ingredients
Ensure all ingredients are chopped and ready before starting, as the cooking process is quick.

Step 2: Scramble the Eggs

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the beaten eggs and scramble until just set. Remove and set aside.

Step 3: Stir-Fry the Vegetables and Protein

  • Add the remaining tablespoon of oil to the pan.
  • Sauté onions, garlic, carrots, and peas for 2-3 minutes until slightly softened.
  • Add the cooked protein of choice and stir-fry for another 1-2 minutes.

Step 4: Add the Rice

  • Add the cold, cooked rice to the pan.
  • Use a spatula to break up any clumps and mix well with the vegetables and protein.

Step 5: Season the Fried Rice

  • Pour in the soy sauce, oyster sauce (if using), sesame oil, and white pepper.
  • Stir well to coat the rice evenly.

  • Add the scrambled eggs back into the pan and mix well.
