For the Beef and Marinade:

- 1/4 cup beef broth or water
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1 tablespoon brown sugar
- 1 teaspoon rice vinegar
- 1/2 teaspoon ground white pepper
For the Stir-Fry:
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 4 cups broccoli florets
- 1/2 cup water
Instructions
- Marinate the Beef: In a medium bowl, combine the sliced flank steak with soy sauce, cornstarch, sesame oil, and sugar. Mix well and let it marinate for at least 15 minutes while preparing the other ingredients.
- Prepare the Sauce: In a small bowl, whisk together the soy sauce, beef broth, oyster sauce, cornstarch, brown sugar, rice vinegar, and white pepper until smooth. Set aside.
- Cook the Broccoli: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli and stir-fry for about 2 minutes. Pour in 1/2 cup of water, cover, and let the broccoli steam for another 2 minutes until bright green and tender-crisp. Remove the broccoli from the pan and set aside.
- Cook the Beef: In the same pan, add the remaining tablespoon of vegetable oil. Add the marinated beef in a single layer and cook for about 2-3 minutes until browned, stirring occasionally.
- Add the Aromatics: Stir in the minced garlic and ginger, cooking for another 30 seconds until fragrant.
- Combine Everything: Return the broccoli to the pan. Pour in the prepared sauce and stir everything together. Cook for another 2 minutes until the sauce thickens and coats the beef and broccoli evenly.
- Serve: Remove from heat and serve immediately over steamed rice or noodles.
