For the Boursin Sauce:
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 (5.2 oz) package Boursin cheese (Garlic & Fine Herbs)
- 1/2 cup chicken broth
- 1/2 teaspoon Dijon mustard (optional)
- 1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme)
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Chicken:
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear the chicken for 4-5 minutes per side, until golden brown.
- Reduce heat to medium, cover, and cook for another 5-7 minutes, until the internal temperature reaches 165°F (75°C).
- Remove chicken from the pan and set aside.
- Make the Boursin Sauce:
- In the same pan, melt 1 tablespoon of butter over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Pour in the chicken broth and scrape up any browned bits.
- Stir in the heavy cream and let it warm for about 2 minutes.
- Add the Boursin cheese, breaking it up with a spoon, and stir until melted.
- Mix in the Dijon mustard, thyme, red pepper flakes (if using), and Parmesan cheese.
- Simmer for 3-5 minutes, stirring occasionally, until the sauce thickens.
- Combine and Serve:
- Return the cooked chicken to the skillet and spoon some sauce over the top.
- Simmer for 2-3 minutes to allow the flavors to meld.
- Garnish with fresh parsley and serve over pasta, rice, or mashed potatoes.
