Description

  • 2 large boneless, skinless chicken breasts

  • ½ teaspoon garlic powder

  • Salt and freshly ground black pepper, to taste

  • 1 tablespoon olive oil

  • 1 tablespoon unsalted butter

  • ½ medium onion, finely chopped

  • ¾ cup low-sodium chicken broth

  • 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese, softened

  • Fresh parsley, chopped, for garnish (optional)


Instructions

1. Prepare the Chicken:

  • Slice each chicken breast horizontally into two thinner cutlets (4 pieces total).

  • Season both sides with garlic powder, salt, and pepper.

2. Cook the Chicken:

  • Heat olive oil and butter in a large skillet over medium-high heat.

  • Add chicken and cook for 5–6 minutes per side, until golden and fully cooked (165°F internal temp).

  • Transfer to a plate and cover with foil.

3. Make the Sauce:

  • In the same skillet, sauté chopped onion over medium heat for ~5 minutes, until translucent.

  • Pour in chicken broth, scraping up any browned bits.

  • Add Boursin cheese and stir until melted and smooth. Simmer 2–3 minutes to slightly thicken.

4. Combine and Serve:

  • Return chicken to the skillet, coating with sauce.

  • Simmer another 2–3 minutes to warm through.

  • Garnish with parsley and serve hot.

Notes

  • Storage: Refrigerate leftovers in an airtight container for up to 3 days.

  • Reheat: Warm gently on the stove with a splash of broth or water to loosen the sauce.

  • Freezing: Not recommended—sauce may separate.
