Ingredients

2 large boneless, skinless chicken breasts

½ medium onion, finely chopped

¾ cup low-sodium chicken broth

1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese, softened

Instructions
1. Prepare the Chicken:

Slice each chicken breast horizontally into two thinner cutlets (4 pieces total).

Season both sides with garlic powder, salt, and pepper.
2. Cook the Chicken:

Heat olive oil and butter in a large skillet over medium-high heat.

Add chicken and cook for 5–6 minutes per side, until golden and fully cooked (165°F internal temp).

Transfer to a plate and cover with foil.
3. Make the Sauce:

In the same skillet, sauté chopped onion over medium heat for ~5 minutes, until translucent.

Pour in chicken broth, scraping up any browned bits.

Add Boursin cheese and stir until melted and smooth. Simmer 2–3 minutes to slightly thicken.
4. Combine and Serve:

Return chicken to the skillet, coating with sauce.
