Ingredients

Scale

For the Stir Fry:

  • 2 packs of instant ramen (discard seasoning packets)
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1 teaspoon sesame seeds (optional, for garnish)

For the Sauce:

  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon cornstarch (optional, for thickening)
  • ¼ teaspoon red pepper flakes (optional, for heat)

Instructions

  1. Prepare the Noodles
    • Boil the ramen noodles for 1-2 minutes, just until they begin to separate. Drain and rinse under cold water to stop cooking. Set aside.
  2. Make the Sauce
    • In a small bowl, whisk together the soy sauce, hoisin sauce, honey (or brown sugar), sesame oil, garlic, ginger, and red pepper flakes. If using cornstarch, dissolve it in 1 tablespoon of water before adding.
  3. Cook the Chicken
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the chicken pieces and cook for 4-5 minutes until golden brown and cooked through. Remove and set aside.
  4. Stir Fry the Vegetables
    • Add the remaining tablespoon of vegetable oil to the skillet.
    • Stir-fry the bell pepper, broccoli, and carrot for 3-4 minutes until slightly tender but still crisp.
  5. Combine Everything
    • Return the chicken to the pan and pour in the sauce. Stir to coat everything evenly.
    • Add the cooked ramen noodles and toss well, cooking for another 1-2 minutes until everything is heated through and coated in sauce.
  6. Garnish & Serve
    • Remove from heat and sprinkle with chopped green onions and sesame seeds.
    • Serve immediately and enjoy!

Notes

  • Protein Swap: Substitute chicken with shrimp, beef, or tofu.
  • Vegetable Add-Ins: Try mushrooms, snap peas, baby corn, or bok choy.
  • Gluten-Free Option: Use rice noodles and tamari instead of ramen and soy sauce.
  • Spicy Version: Add extra red pepper flakes, sriracha, or chili oil.
