For the Stir Fry:
- 2 packs of instant ramen (discard seasoning packets)
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 green onions, chopped
- 1 teaspoon sesame seeds (optional, for garnish)
For the Sauce:
- ¼ cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon honey or brown sugar
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon cornstarch (optional, for thickening)
- ¼ teaspoon red pepper flakes (optional, for heat)
Instructions
- Prepare the Noodles
- Boil the ramen noodles for 1-2 minutes, just until they begin to separate. Drain and rinse under cold water to stop cooking. Set aside.
- Make the Sauce
- In a small bowl, whisk together the soy sauce, hoisin sauce, honey (or brown sugar), sesame oil, garlic, ginger, and red pepper flakes. If using cornstarch, dissolve it in 1 tablespoon of water before adding.
- Cook the Chicken
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces and cook for 4-5 minutes until golden brown and cooked through. Remove and set aside.
- Stir Fry the Vegetables
- Add the remaining tablespoon of vegetable oil to the skillet.
- Stir-fry the bell pepper, broccoli, and carrot for 3-4 minutes until slightly tender but still crisp.
- Combine Everything
- Return the chicken to the pan and pour in the sauce. Stir to coat everything evenly.
- Add the cooked ramen noodles and toss well, cooking for another 1-2 minutes until everything is heated through and coated in sauce.
- Garnish & Serve
- Remove from heat and sprinkle with chopped green onions and sesame seeds.
