Description

A quick and delicious cheesy potato egg scramble that combines tender potatoes, fluffy eggs, and melted cheese for a hearty breakfast. Perfect for busy mornings or a weekend brunch!

Ingredients

Scale
  • 2 medium potatoes, diced
  • 1 tablespoon olive oil or butter
  • 1/4 cup onion, finely chopped
  • 4 large eggs
  • 1/4 cup milk (optional, for fluffier eggs)
  • Salt and black pepper, to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon paprika (optional, for extra flavor)
  • 1/2 cup shredded cheddar cheese (or cheese of choice)
  • 1/4 cup bell peppers, diced (optional)
  • 1/4 cup cooked bacon or sausage (optional)
  • Fresh parsley or green onions for garnish

Instructions

  1. Prepare the Potatoes: Heat olive oil or butter in a skillet over medium heat. Add diced potatoes and cook for 8–10 minutes, stirring occasionally, until golden brown and tender.
  2. Sauté the Vegetables: Add chopped onion (and bell peppers if using) to the skillet and cook for 2–3 minutes until softened.
  3. Whisk the Eggs: In a separate bowl, whisk together eggs, milk (if using), salt, black pepper, garlic powder, and paprika.
  4. Cook the Eggs: Pour the egg mixture over the potatoes and stir gently. Cook for 3–5 minutes, stirring occasionally, until the eggs are just set.
  5. Add Cheese and Protein: Sprinkle shredded cheese over the scramble and add cooked bacon or sausage if desired. Cover for 1–2 minutes until cheese melts.
  6. Garnish & Serve: Remove from heat, sprinkle with fresh parsley or green onions, and serve warm.

Notes

  • Spicy Kick: Add diced jalapeños or a dash of hot sauce.
  • Veggie-Packed: Mix in mushrooms, spinach, or tomatoes.
  • Different Cheeses: Try mozzarella, feta, or pepper jack for a unique twist.
  • Meat-Free: Skip bacon or sausage and add black beans for extra protein.
