Instructions
- Prepare the Potatoes: Heat olive oil or butter in a skillet over medium heat. Add diced potatoes and cook for 8–10 minutes, stirring occasionally, until golden brown and tender.
- Sauté the Vegetables: Add chopped onion (and bell peppers if using) to the skillet and cook for 2–3 minutes until softened.
- Whisk the Eggs: In a separate bowl, whisk together eggs, milk (if using), salt, black pepper, garlic powder, and paprika.
- Cook the Eggs: Pour the egg mixture over the potatoes and stir gently. Cook for 3–5 minutes, stirring occasionally, until the eggs are just set.
- Add Cheese and Protein: Sprinkle shredded cheese over the scramble and add cooked bacon or sausage if desired. Cover for 1–2 minutes until cheese melts.
