Scale

For the Ground Beef Filling:

  • 1 lb ground beef (80/20 recommended)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder (optional for heat)
  • 1 tablespoon tomato paste
  • 1/2 cup beef broth or water
  • 1 cup shredded cheddar cheese (or a blend of your choice)

For the Creamy Sauce:

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1 teaspoon hot sauce (optional)

Additional Ingredients:

  • 4 large flour tortillas
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Prepare the Ground Beef Filling:
    • Heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon.
    • Once mostly browned, add the chopped onion and garlic. Sauté for about 3 minutes until the onion softens.
    • Stir in salt, pepper, smoked paprika, chili powder (if using), and tomato paste. Mix well.
    • Pour in the beef broth and let simmer for 5 minutes until slightly thickened. Remove from heat.
    • Stir in the shredded cheese until melted and well combined.
  2. Make the Creamy Sauce:
    • In a small bowl, whisk together sour cream, mayonnaise, lime juice, garlic powder, onion powder, smoked paprika, salt, and hot sauce.
    • Taste and adjust seasoning as needed. Set aside.
  3. Assemble the Wraps:
    • Warm the flour tortillas in a dry skillet for a few seconds on each side.
    • Spread a spoonful of the creamy sauce over each tortilla.
    • Add a generous portion of the cheesy beef mixture.
    • Top with shredded lettuce, diced tomatoes, and chopped cilantro if using.
    • Fold in the sides and roll tightly into a wrap.
  4. Serve and Enjoy:
    • Slice the wrap in half and serve immediately.
    • Optionally, toast the wrap in a pan for a crispy finish.

Notes

  • Spicy Version: Add jalapeños or use spicier cheese.
  • Low-Carb Option: Use lettuce wraps instead of tortillas.
  • Tex-Mex Twist: Add black beans and corn for extra flavor.
  • Extra Cheesy: Mix in cream cheese or top with queso.
