Ready in under 30 minutes, it’s packed with flavor and easy to customize.

Ingredients

Scale
  • 2 large zucchini
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Prep the Zucchini
    • Preheat the oven to 400°F (200°C).
    • Slice the zucchini lengthwise into thick “steaks” (about ½-inch thick).
    • Brush both sides of the zucchini with olive oil and season with salt, pepper, and Italian seasoning.
  2. Roast the Zucchini
    • Arrange the zucchini steaks on a baking sheet lined with parchment paper.
    • Bake for 15 minutes, flipping halfway through, until tender and lightly golden.
  3. Add the Cheesy Garlic Topping
    • In a small bowl, mix the minced garlic, mozzarella, Parmesan, and red pepper flakes (if using).
    • Sprinkle the cheese mixture evenly over the roasted zucchini steaks.
  4. Broil to Perfection
    • Switch the oven to broil and cook for 2-3 minutes, or until the cheese is melted, bubbly, and golden brown.
    • Keep a close eye to prevent burning.
  5. Garnish and Serve
    • Remove from the oven and sprinkle with fresh parsley.
    • Serve hot as a side dish or light main course.
