  • 1 tsp rice vinegar (optional, for added depth)

Instructions

  1. Prepare the Ingredients
    • If making homemade cauliflower rice, pulse fresh cauliflower in a food processor until it resembles rice. Set aside.
    • Pat shrimp dry and season with salt and pepper.
  2. Cook the Shrimp
    • Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat.
    • Add shrimp and cook for 2–3 minutes per side until pink and opaque. Remove from pan and set aside.
  3. Scramble the Eggs
    • In the same skillet, push any leftover oil to one side and pour in the beaten eggs.
    • Scramble until just set, then transfer to a plate.

  5. Cook the Cauliflower Rice

    • Cook for 5–6 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
  6. Combine Everything
    • Add back the shrimp and scrambled eggs, stirring well.
    • Toss in the green onions and a splash of rice vinegar for extra flavor.

    • Serve hot, garnished with extra green onions if desired.
