  • 1 can (14 oz) coconut milk
  • 1/2 cup vegetable or chicken broth
  • 1 tablespoon soy sauce or tamari (optional for gluten-free)
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Sliced red chili (optional, for garnish)

Instructions

  1. Prepare the Salmon: Pat salmon fillets dry, season both sides with salt and pepper, and set aside.

  2. Cook the Aromatics: Heat olive oil in a skillet over medium heat. Sauté chopped onion for 3 minutes until softened. Add garlic and ginger, cooking for 1-2 minutes until fragrant.

  3. Add the Spices: Stir in curry powder, turmeric, and paprika. Cook for 1 minute, allowing the spices to bloom.

  4. Make the Coconut Sauce: Add coconut milk, broth, soy sauce (if using), brown sugar, salt, and pepper. Let the sauce simmer for about 5 minutes.

  5. Cook the Salmon: Add the salmon fillets, skin-side down. Spoon sauce over the fillets, cover the skillet, and simmer for 10-12 minutes, until salmon is cooked through.

  6. Finish the Dish: Squeeze lime juice over the salmon, garnish with cilantro and red chili slices.

  7. Serve: Serve over rice, vegetables, or plantains for a full tropical experience.
