  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 lemon, sliced
  • 2 tbsp melted butter
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  • Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it lightly.
  • Season Vegetables: Toss baby potatoes, corn, bell pepper, and onion with 2 tbsp olive oil, 1 tbsp Cajun seasoning, garlic powder, paprika, salt, and black pepper. Spread evenly on the baking sheet.
  • Bake Vegetables: Roast for 20-25 minutes, until potatoes are fork-tender.
  • Prepare Shrimp: Toss shrimp with the remaining 1 tbsp olive oil, 1 tbsp Cajun seasoning, and melted butter.
  • Combine and Bake: Add seasoned shrimp and lemon slices to the pan, mix with vegetables, and bake for another 8-10 minutes until shrimp are pink and opaque.
  • Garnish & Serve: Remove from oven, sprinkle with parsley, and serve immediately.
