Ingredients

Scale
  • 1 tablespoon olive oil
  • 12 ounces smoked sausage, sliced into rounds
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 tablespoon Cajun seasoning (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Ingredients
Slice the sausage, dice the vegetables, and mince the garlic.
  2. Sauté Sausage and Vegetables
Heat olive oil in a large skillet over medium heat. Brown the sausage for 3-4 minutes per side, remove, and set aside. Sauté onion and bell peppers in the same skillet for 4-5 minutes until softened. Add garlic and cook for 30 seconds.
  3. Add Rice and Spices
Stir rice into the vegetables, adding Cajun seasoning, smoked paprika, cayenne, salt, and pepper. Mix well to coat the rice.
  4. Add Liquids and Sausage
Pour in chicken broth and diced tomatoes. Stir to combine and return sausage to the skillet.
  5. Simmer
Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, until rice is tender and liquid is absorbed.
  6. Garnish and Serve
Fluff rice with a fork. Garnish with green onions and parsley. Serve immediately.
