  • 2 green onions, sliced (for garnish)

Instructions

  1. Sauté the Sausage and Vegetables
    • Heat olive oil in a large skillet over medium-high heat.
    • Add sliced sausage and cook for 3-4 minutes until lightly browned.
    • Add diced onion and bell pepper, cooking for another 3 minutes until softened.
    • Stir in minced garlic and cook for 30 seconds until fragrant.
  2. Add Seasonings and Rice
    • Sprinkle in Cajun seasoning, paprika, and dried thyme, stirring to coat evenly.
    • Add rice and stir for 1 minute to lightly toast it.
  3. Simmer
    • Pour in chicken broth and diced tomatoes (with juice). Stir to combine.
