- 1 small onion, diced
- 1 bell pepper (red or green), diced

- 1/2 teaspoon paprika
- 1/4 teaspoon dried thyme
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1/2 teaspoon salt (adjust as needed)
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, sliced (for garnish)
Instructions
- Sauté the Sausage and Vegetables
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced sausage and cook for 3-4 minutes until lightly browned.
- Add diced onion and bell pepper, cooking for another 3 minutes until softened.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add Seasonings and Rice
- Sprinkle in Cajun seasoning, paprika, and dried thyme, stirring to coat evenly.
- Add rice and stir for 1 minute to lightly toast it.
- Simmer
- Pour in chicken broth and diced tomatoes (with juice). Stir to combine.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 18-20 minutes, until the rice is tender.
- Serve
- Remove from heat and let sit covered for 5 minutes.
- Fluff rice with a fork and garnish with green onions.
- Serve hot and enjoy!
