For the Cajun Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste

For the Creamy Cajun Sauce:

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Chicken:
    Pat the chicken breasts dry. Mix Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper in a small bowl. Rub the mixture evenly on both sides of the chicken.

  • Cook the Chicken:
    Heat olive oil in a large skillet over medium-high heat. Once hot, add chicken and cook for 5-6 minutes per side until golden brown and the internal temperature reaches 165°F. Remove chicken and set aside.

  • Make the Creamy Cajun Sauce:
    In the same skillet, melt butter and olive oil. Add minced garlic and sauté for 1-2 minutes. Pour in heavy cream and chicken broth, stirring to combine. Add Cajun seasoning, smoked paprika, thyme, salt, and pepper. Let the sauce simmer for 3-4 minutes until slightly thickened.

 

  • Combine and Serve:
    Return the chicken to the skillet, spoon sauce over the top, and simmer for 2-3 minutes. Garnish with chopped parsley and serve.
