- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Prepare the Pork Tenderloin
- Preheat oven to 375°F (190°C).
- Trim any silver skin or excess fat from the pork tenderloin and pat it dry with paper towels.
- Season the Tenderloin
- In a small bowl, mix brown sugar, Dijon mustard, smoked paprika, garlic powder, salt, and pepper.
- Rub the mixture evenly over the pork tenderloin, coating all sides.
- Wrap with Bacon
- Lay the bacon slices on a cutting board, slightly overlapping.
- Place the seasoned tenderloin on top and carefully wrap the bacon around it, securing the ends underneath.
- Use toothpicks if needed to hold the bacon in place.
- Sear for Extra Flavor (Optional)
- Heat olive oil in a large oven-safe skillet over medium heat.
- Sear the bacon-wrapped tenderloin for 1-2 minutes per side until lightly browned.
- Bake to Perfection
- Transfer the skillet (or place the tenderloin on a baking sheet lined with foil) to the preheated oven.
- Bake for 25-30 minutes, or until the internal temperature reaches 145°F (63°C) for a slightly pink center.
- Broil for the last 2-3 minutes for crispy bacon.
- Rest and Serve
- Remove from the oven and let the pork rest for 5-10 minutes before slicing.
- Slice into medallions and serve with your favorite sides.
