Description

A mouthwatering Brown Sugar Bacon-Wrapped Pork Tenderloin that’s smoky, sweet, and savory. Juicy pork tenderloin is wrapped in crispy bacon and coated in a rich brown sugar glaze, creating a caramelized crust. Perfect for family dinners, special occasions, or meal prep.

Ingredients

Scale
  • 1 pork tenderloin (1 to 1.5 lbs)
  • 810 slices of bacon (enough to wrap around the tenderloin)
  • 1/2 cup brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Pork Tenderloin
    • Preheat oven to 375°F (190°C).
    • Trim any silver skin or excess fat from the pork tenderloin and pat it dry with paper towels.
  2. Season the Tenderloin
    • In a small bowl, mix brown sugar, Dijon mustard, smoked paprika, garlic powder, salt, and pepper.
    • Rub the mixture evenly over the pork tenderloin, coating all sides.
  3. Wrap with Bacon
    • Lay the bacon slices on a cutting board, slightly overlapping.
    • Place the seasoned tenderloin on top and carefully wrap the bacon around it, securing the ends underneath.
    • Use toothpicks if needed to hold the bacon in place.
  4. Sear for Extra Flavor (Optional)
    • Heat olive oil in a large oven-safe skillet over medium heat.
    • Sear the bacon-wrapped tenderloin for 1-2 minutes per side until lightly browned.
  5. Bake to Perfection
    • Transfer the skillet (or place the tenderloin on a baking sheet lined with foil) to the preheated oven.
    • Bake for 25-30 minutes, or until the internal temperature reaches 145°F (63°C) for a slightly pink center.
    • Broil for the last 2-3 minutes for crispy bacon.
  6. Rest and Serve
    • Remove from the oven and let the pork rest for 5-10 minutes before slicing.
    • Slice into medallions and serve with your favorite sides.

Notes

  • Spicy Kick: Add a pinch of cayenne pepper or red pepper flakes to the brown sugar rub.
  • Maple Glaze: Replace brown sugar with maple syrup for a deeper sweetness.
  • Herb-Infused: Add rosemary or thyme to the seasoning mix.
  • BBQ Twist: Brush with barbecue sauce during the last 5 minutes of baking.
  • Cheesy Surprise: Stuff the tenderloin with cream cheese and chives before wrapping in bacon.
