- 2 cups Carolina long-grain rice
- 1 cup full-fat, unsweetened coconut milk
- 1 cup water
- 1/2 cup thinly sliced scallions
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup canola oil
Instructions
Step 1: Cook the Rice
- In a medium saucepan, combine coconut milk, water, salt, and pepper.
- Bring the mixture to a boil over high heat.
- Stir in the rice and return to a boil.
- Lower heat to medium-low, cover, and cook for about 18 minutes until the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the rice gently with a fork.
Step 2: Cool the Rice
- Spread the rice evenly on a large baking sheet and let it cool completely for about 30 minutes.
- If preparing ahead, cover and refrigerate overnight.
Step 3: Crisp the Rice
- In a large bowl, mix the cooled rice with scallions.
- Heat canola oil in a large cast-iron or nonstick skillet over high heat until shimmering.
- Add the rice, pressing it down into an even layer with a metal spatula.
- Cook undisturbed for 4-5 minutes until golden and crispy.
- Flip the rice carefully, press down again, and cook for another 4-5 minutes until crisp.
- Transfer to a serving platter and garnish with extra scallions.
