  • 1 (10-ounce) can Rotel tomatoes (optional, for extra spice)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon apple cider vinegar
  • 1 (16-ounce) package frozen or fresh turnip greens
  • 1 cup diced potatoes (optional, for extra heartiness)

Instructions

  1. Sauté the Aromatics
    Heat olive oil in a large pot over medium heat. Brown the smoked sausage, about 5 minutes. Remove and set aside. Sauté onion until softened (3 minutes), then add garlic and cook for 1 more minute.
  2. Build the Broth
    Pour in chicken broth, diced tomatoes, and Rotel tomatoes (if using). Stir well to deglaze the pot.
  3. Add Beans and Seasonings
    Add drained great northern beans and black-eyed peas. Stir in smoked paprika, red pepper flakes, salt, and black pepper.
  4. Simmer the Soup
    Return sausage to the pot. Stir in apple cider vinegar and turnip greens. Simmer, covered, for 25–30 minutes until greens are tender.
  5. Add Potatoes (Optional)
    If using potatoes, add them 15 minutes into simmering and cook until fork-tender.
