Ingredients
- 2 cups uncooked long-grain white rice
- 3 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 boneless, skinless chicken breasts
- 1 cup shredded cheddar cheese (optional)
- 1 tablespoon olive oil or melted butter
- 1/2 teaspoon dried thyme (optional)
- 1/2 teaspoon Italian seasoning (optional)
Instructions
Step 1: Preheat the Oven
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Step 2: Prepare the Rice Mixture
In the baking dish, mix uncooked rice, chicken broth, cream of chicken soup, cream of mushroom soup, garlic powder, onion powder, paprika, salt, and black pepper.
Step 3: Add the Chicken
Place chicken breasts on top of the rice mixture. Brush with olive oil or butter. Sprinkle with additional paprika, thyme, and Italian seasoning if desired.
Step 4: Bake the Casserole
Cover with foil and bake for 45 minutes. Uncover and bake for another 15-20 minutes, or until rice is tender and chicken reaches 165°F (74°C).
Step 5: Add Cheese (Optional)
If using cheese, sprinkle on top during the last 10 minutes of baking.
Step 6: Rest and Serve
Let casserole sit for 5 minutes before serving.
