- 1 lb ground beef
- 1 small onion, finely chopped

- 1 (10 oz) can red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8–10 small corn tortillas
- 1/2 cup chopped fresh cilantro (optional, for garnish)
- 1/2 cup sour cream (optional, for serving)
- 1/2 cup diced tomatoes (optional, for garnish)
- 1/4 cup sliced green onions (optional, for garnish)
Instructions
- Preheat and Prepare: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook the Beef Filling: In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Add the chopped onion and garlic, cooking until softened (about 3-4 minutes). Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Pour in 1/4 cup of the enchilada sauce and mix well. Remove from heat.
- Assemble the Enchiladas: Warm tortillas slightly to make them pliable (wrap in a damp paper towel and microwave for 20-30 seconds). Spoon 2-3 tablespoons of the beef mixture onto each tortilla, sprinkle with cheese, roll tightly, and place seam-side down in the baking dish.
- Add Sauce and Cheese: Pour remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining shredded cheese.
- Bake: Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Garnish and Serve: Let cool for a few minutes. Garnish with fresh cilantro, diced tomatoes, green onions, and sour cream if desired. Serve warm.
